Egg Salad Sandwich is what my husband and I always order when we’re in Cafe France. It’s one of our favorite kind of sandwich – simple yet yummy. So when Chinese New Year was done and there were left over hard-boiled eggs given to us by my in-laws, I decided to make our own egg salad. How hard can it be right?
What you need:
– hard boiled eggs
– mayo or lite mayo
– tomato, sliced
– bread (preferably ciabatta but we didn’t have any at that time)
Peel the egg shells and chop the eggs or you can put them into the mincer and let it do the work, but you must chop them a little bit first. Add the mayo and mix. Prepare the bread, lettuce, and tomatoes and pile them up together.
