Baked Salmon and Grilled Zucchinis

There are times when I am in a hurry and can’t give lunch or dinner much thought anymore. I resort to this recipe that is very easy to prepare and cook. It never fails! That is why there’s always some salmon fillets stock in my freezer for times like these. Rub in some salt, pepper, and dried herbs and put in the oven, after 15 minutes or so, you got a nice and healthy meal in front of you.

Baked Salmon with Lemon and Herbs
– salmon fillet
– salt and pepper
– dried or fresh herbs (basil, rosemary, thyme, and parsley)
– 2 round slices of lemon
– lemon juice

Preheat oven to 180 degrees Celsius. Squeeze some lemon juice over the salmon fillet. Rub in salt, pepper, and herbs. Place a slice of lemon underneath and on top of the fillet. Put in the oven and bake for 15 minutes. The baking time depends on the thickness of the salmon fillet. You can check after 12 minutes then if the thicker portion of the salmon isn’t done yet, add some more minutes. Just make sure not to overcook so the salmon won’t turn dry.

Grilled Zucchinis
– 1 whole zucchini, cut into 1 inch slices
– salt and pepper
– extra virgin olive oil
– dried or fresh herbs (same as above)

Coat the sliced zucchinis with olive oil and herbs. Add salt and pepper. Use a grill pan to get those nice grill lines.
