It was a lazy Sunday and all I wanted to do was to make an easy recipe for dinner. Good thing there was a can of tomatoes in my pantry that I can just add to my sole fish fillets.
What you need:
– 1 pc Sole fish fillet
– salt and pepper
– 1/2 white onion, cubed
– 1/2 can of roasted garlic tomatoes
Season the sole fish fillet with salt and pepper and set aside. Heat up the pan with some light olive oil and pan fry the fish fillets until done. Add the tomatoes and onions and cook until onions are a little bit translucent but still crunchy. Add some salt to taste. Transfer to a plate then serve!
