What you need:
– 1/2 chicken breast fillet, cubed
– 1 tsp cornstarch
– 12 stalks of asparagus
– 1/2 white onion, wedged
– 2 Chinese mushrooms, sliced
– 2 tbsp soy sauce
– 1/2 cup water
– 1/2 tsp cooking wine
Season the chicken cubes with salt and coat with cornstarch. Set aside.
Soak the Chinese mushrooms in hot water. Set aside. When the mushrooms are tender, thinly slice.
For the preparation of asparagus, please refer to my previous post: Salmon and Asparagus Pasta. This time, cut the asparagus 2 inches long.
Sauté garlic and shallots in light olive oil. Cook the mushrooms and the chicken cubes. Add the soy sauce, water, and cooking wine. Add the asparagus. Lastly, the onions. Stir fry for a minute or so, then serve!
