Curry Tilapia Fillet

What you need:
– 4 tilapia fillets
– 1/8 cup soy sauce
– 4 pcs calamansi
– 1/2 tsp brown sugar
– curry powder
– 1/2 red onion, chopped
– 1/4 cup coriander, chopped

Mix the soy sauce, calamansi juice, and brown sugar. Marinate the tilapia fillets in the soy calamansi mix. Sprinkle both sides with curry powder. Set aside for about 30 minutes.

In a pan, heat up some light olive oil and fry the fillets until done. Place the fillets on a plate. Sauté the red onions and coriander in the pan and mix in some of the leftover marinade. Pour on top of the fillets then serve.
