Chicken Yakisoba

What you need:
– 4 packs of individually wrapped Japanese Udon
– 1/2 chicken breast, sliced thinly
– 2 tsp minced garlic
– 1/2 cup thinly sliced carrots
– 1/2 cup thinly sliced green beans
– 1 cup thinly sliced cabbage
– 1 red onion, thinly sliced
– 3 shiitake mushrooms (soaked), thinly sliced
– 4 tbsp light soy sauce
– 3 tbsp oyster sauce
– 2 tbsp sweet soy sauce
– 3 tbsp water
– 1 tbsp Chinese cooking wine
– 1 tbsp chopped chives
– salt and pepper

Cook the udon according to instructions in the packaging then set aside.

Sauté minced garlic in light olive oil. Cook the chicken strips until they turn white then add the mushrooms. Add the carrots, green beans, and cabbage. Stir fry for a minute or so then add the red onions. Add the light soy sauce, oyster sauce, sweet soy sauce, water, and cooking wine. Transfer the cooked udon and mix them all together. Add salt and pepper to taste. Add fresh chives on top.
