Curry Basil Lapu-Lapu

What you need:
– lapu-lapu fillet, cubed
– curry powder
– salt and pepper
– 1 tsp minced garlic
– 6 thin slices of ginger
– 1 tbsp sweet soy sauce
– 2 tbsp light soy sauce
– 1/2 white onion, sliced
– 10 fresh basil leaves
– 1/3 cup chopped fresh coriander

Marinate the lapu-lapu cubes with salt, pepper, and curry powder. Set aside.

Sauté minced garlic and ginger slices in light olive oil. Cook the lapu-lapu cubes. Add the sweet soy sauce and light soy sauce. Then add the onions, basil, and coriander. Stir-fry for a minute then serve!
