What you need:
– 4 medium sized potatoes, peeled
– 1/4 cup fresh milk
– salt and pepper
– 4 pcs cooked ham, cut into small pieces
– mozzarella or Magnolia Quikmelt Cheese, cut into small cubes
– 1 egg
– all purpose flour
– bread crumbs
– parsley flakes
Wash and peel the potatoes. Slice the potatoes into big cubes. Steam them until soft and tender. Using a masher or fork, mash the steamed potatoes.
Season the mashed potatoes with salt and pepper. Add the milk and the ham and mix together. Set aside.
Beat the egg. Pour all purpose flour and bread crumbs in two separate shallow dishes. Add parsley flakes and some salt to the bread crumbs. Mix properly.
Using a round tablespoon, scoop a heaping amount of mashed potatoes into your palm and place the cheese cube in the middle. Roll the mashed potato into a ball.
Coat the potato ball with all purpose flour then dip it in the egg wash. Finally, coat it with the bread crumbs.
Set the air fryer at 200 degrees Celsius. Cook the croquettes for 7 minutes or until golden brown.
Instead of ham, you can also use bacon bits which I think will make the croquettes even yummier! 🙂 🙂
