What you need:
– 1/2 chicken fillet, minced*
– 2 tsp minced garlic
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 tsp brown sugar
– 2 tsp cornstarch
– 1 cup singkamas or Jicama, chopped
– 1 cup carrots, chopped
– 1 cup onions, chopped
– 1 cup shiitake mushrooms or Chinese mushrooms, chopped
– 1 tbsp light soy sauce
– 2 tbsp oyster sauce
– 1 tbsp water
– 1 tbsp grated peanut
– 1 head of lettuce, peeled and washed
Mix together minced chicken, minced garlic, salt, pepper, and brown sugar. Then add the cornstarch and mix again. Set aside.
Chop the vegetables.
In a pan, with some light olive oil, cook the minced chicken until they turn white. Separate into small pieces when they stick together. Add the mushrooms and stir fry. Then add the carrots and singkamas. Do not cook the vegetables too long so they remain crunchy. Add the onions. Add the light soy sauce, oyster sauce, and water. Add the grated peanut and stir fry for another minute then it’s done.
Prepare the lettuce. Wash thoroughly and let dry. Serve together with the minced chicken.
* You can also use minced pork if you like.
