Zucchini and Potato Egg Pancakes

What you need:
– 1/2 zucchini, thinly sliced
– 1 potato, thinly sliced
– 4 eggs
– garlic powder
– salt
– pepper

Whisk the eggs and season with garlic powder, salt, and pepper. Mix in the zucchinis and potatoes.

Heat a round pan with light olive oil. Pour the egg mixture in the pan. Cook until the sides and back are browned then flip. Use two large flat spatulas to help you with the flipping. When both sides are browned, it’s done!
