Salmon Kebabs

What you need:
– salmon cubes
– pineapple chunks
– red onion, cubed
– red bell pepper, cubed
– green bell pepper, cubed
– zucchini, cubed
– salt and pepper
– lemon juice
– 1 tsp minced garlic
– sticks, soaked in water

Marinade:
– 2 tbsp pineapple juice
– 1 tbsp light soy sauce
– 1 tbsp honey
– 1/2 tbsp apple cider vinegar

Season the salmon cubes with salt and pepper and squeeze some lemon juice over them. Set aside.

Prepare the marinade. Mix the pineapple juice, light soy sauce, honey, and apple cider vinegar together. Set aside.

Prepare the kebabs. Insert the stick into the red onions, salmon cubes, pineapple chunks, zucchini cubes, red bell peppers, and green bell peppers in any order you want or you may follow my order just like in the picture. Brush the marinade onto the kebabs. Set aside.

Prepare the grill. Sauté some minced garlic on the grill with some light olive oil. Place the kebabs on the grill. Brush leftover marinade onto the kebabs every time you turn the sticks around. They should be done when you see grill marks on the kebabs.
