Basil Chicken


Recipe adapted from Rasa Malaysia

What you need:

2 tablespoons oil

4 cloves garlic, finely chopped

2 shallots, finely chopped

10 oz ground chicken

1 red chili, cut into small pieces (add more if you want spicier) 

1 1/4 tablespoons fish sauce

1 teaspoon brown sugar

1/2 teaspoon kecap manis or sweet soy sauce

1 big bunch Thai basil leaves, lower stems removed, cut into small strips

A few drops of dark soy sauce (


Sautè the minced garlic and shallots until fragrant. Add the ground chicken and break them into pieces. When the chicken turns white, add the chilis, fish sauce, brown sugar, and sweet soy sauce. Add in the chopped basil and give it a quick stir. Transfer to a plate and serve.
