Taiwanese Braised Minced Pork

  
What you need: 

  • 500g minced pork
  • 1 medium onion, diced
  • 8 medium sized Chinese mushrooms, soaked in hot water and diced
  • 4 pcs star anise
  • 2 pcs bay leaf
  • 1/4 tsp salt
  • 1/4 tsp ginger powder
  • 1 1/2 tsp five spice powder
  • 2 tbsp dark brown sugar
  • 3 tbsp light soy sauce
  • 1 tbsp dark soy sauce

Cook the minced pork on medium heat until they change color. No need for oil because there will be oil coming from the fat of the minced pork. Add the Chinese mushroom and diced onions. Throw in the star anise and bay leaf also. Add the salt, ginger powder, five spice powder, and dark brown sugar. Mix them well. Pour in the light soy sauce and dark soy sauce. Cook until the pork has absorbed the color of the soy sauce, then it’s done.

If you want more sauce, just add water and add more soy sauce to balance the saltiness. I prefer it a bit dry, that is why I didn’t add water anymore. 

This is best paired with rice, some steamed vegetables like broccoli or baby bokchoy, and braised eggs.
